Sweet Potato Casserole

This sweet potato casserole doesn’t look like much at first glance, but it is the star of the table every year. It’s soft, sweet, and is extremely simple to make. All you need to do is cook the sweet potatoes, mash them, mix with remaining ingredients and bake.

Preparing sweet potatoes in sweet potato casserole

Obviously, sweet potatoes are are the main ingredient in this sweet potato casserle. How we prepare them is by dicing them into small cubes. This is how we will measure out 4 cups and they will also cook faster in the hot water. Once they have been boiled until soft, strain from the hot water and mash them until smooth.

Ingredients
  

  • 4 cups sweet potatoes cubed (600g)
  • ¼ cup sugar
  • pinch of salt
  • 2 large eggs (scrambled)
  • ¼ cup melted butter
  • ½ cup whole milk
  • 1 tsp vanilla extract

Topping

  • ¼ cup brown sugar
  • ½ cup chopped pecans
  • ¼ cup melted butter

Instructions
 

  • Dice sweet potatoes into small cubes.
    4 cups sweet potatoes cubed
  • Boil in hot water for 10 minutes or until tender. Drain and mash.
  • Into the mashed sweet potatoes, add the sugar, eggs, salt, butter, milk, and vanilla extract. Mix until combined.
    ¼ cup sugar, pinch of salt, 2 large eggs, ¼ cup melted butter, ½ cup whole milk, 1 tsp vanilla extract
  • Transfer into an oven safe casserole dish.
  • In a bowl, mix together all the topping ingredients and mix until there is no more flour. It should look grainy.
    ¼ cup brown sugar, ½ cup chopped pecans, ¼ cup melted butter
  • Sprinkle this mixture on top of the sweet potatoes and bake at 350F for 30 minutes.

    I’m not a natural at cooking so can’t guess as it will end up like concrete 🙂
