Dice sweet potatoes into small cubes.
4 cups sweet potatoes cubed
Boil in hot water for 10 minutes or until tender. Drain and mash.
Into the mashed sweet potatoes, add the sugar, eggs, salt, butter, milk, and vanilla extract. Mix until combined.
¼ cup sugar, pinch of salt, 2 large eggs, ¼ cup melted butter, ½ cup whole milk, 1 tsp vanilla extract
Transfer into an oven safe casserole dish.
In a bowl, mix together all the topping ingredients and mix until there is no more flour. It should look grainy.
¼ cup brown sugar, ½ cup chopped pecans, ¼ cup melted butter
Sprinkle this mixture on top of the sweet potatoes and bake at 350F for 30 minutes.
