Buffalo chicken and potatoes is a classic, no-nonsense meal prep that delivers big flavor with minimal effort. Juicy chicken—coated in tangy, spicy buffalo sauce—pairs perfectly with crispy roasted potatoes, giving you that comfort-food satisfaction while still being practical and protein-forward. It reheats exceptionally well, the flavors deepen over time, and it’s easy to customize with extras like celery slaw, green onions, or a drizzle of ranch or blue cheese for balance. Whether you keep it simple or dress it up, this combo is reliable, filling, and never gets boring over a few days of prep.
