Ingredients 

  • 1 can chickpeas
  • ¼ cup tahini
  • ¼ cup lemon juice
  • 1 tsp salt
  • 2 cloves garlic
  • ¼ cup cold water or ice cubes
  • ¼ cup toasted pine nuts
  • ½ cup pomegranites
  • cilantro
  • ¼ cup olive oil
  • ½ lbs beef tenderloin
  • 1 tbsp Arabic 7 spice powder
  • 1 tsp salt
  • 1 tbsp sumac

Instructions 

  • Soak chickpeas in cold water for 10 minutes.
    1 can chickpeas
  • Gently rub off the chickpea skins and strain.
  • Place strained chickpeas into a blender or food processor along with tahini, lemon juice, salt, garlic, and ice cubes or water.
    ¼ cup tahini, ¼ cup lemon juice, 1 tsp salt, 2 cloves garlic, ¼ cup cold water or ice cubes
  • Blend until smooth. Adjust to consistency using olive oil.
  • Cut beef tenderloin into small cubes.
    ½ lbs beef tenderloin
  • Season with salt, 7-spice, and sumac.
    1 tbsp Arabic 7 spice powder, 1 tbsp sumac, 1 tsp salt
  • Sear over high heat for 2-3 minutes.
  • Serve meat on top of the hummus and top with toasted pine nuts, pomegranates, cilantro, and olive oil.
