The marinade combines soy sauce, garlic, ginger, honey, and a splash of rice vinegar to create a deep umami flavor that soaks beautifully into chicken thighs. Once pan-seared, the glaze thickens into a glossy coating that keeps the chicken tender and flavorful for days. Paired with rice, noodles, or veggies, this easy soy glazed chicken stays delicious all week and makes meal prep feel anything but boring.
Why Boneless Skinless Chicken Thighs Are Best for Soy Glazed Chicken
Boneless skinless chicken thighs stay juicy, tender, and deeply flavorful, making them the perfect cut for soy glazed chicken—especially for meal prep. Their higher fat content keeps them moist even after cooking and reheating, while their richness absorbs bold ingredients like soy, garlic, ginger, and honey. Thighs also cook evenly and quickly, allowing the glaze to caramelize beautifully without drying out. For a reliable, delicious meal prep protein, chicken thighs are the clear winner.
Here’s a clean, blog-ready section explaining it:
Why We Coat the Chicken in Cornstarch Before Pan Frying
Coating the chicken in a light layer of cornstarch helps create a gorgeous, caramelized crust that makes the soy glaze cling beautifully. As the chicken cooks, the cornstarch absorbs surface moisture and forms a thin, crisp layer that browns evenly without drying out the meat. This gives the glaze something to grab onto, allowing it to thicken, bubble, and stick instead of sliding off. It also helps lock in the juices, keeping the chicken tender even after cooling and reheating for meal prep. A simple dusting of cornstarch takes this dish from good to truly restaurant-quality.
