Pork tocino is a beloved Filipino breakfast staple made from thin slices of pork, usually shoulder or belly, marinated in a sweet and savory blend of sugar, garlic, salt, soy sauce, and often a touch of pineapple juice for tang and tenderness. Traditionally, annatto or red food coloring is added to give tocino its signature reddish hue. The pork is pan-fried until caramelized and slightly crisp on the edges, creating a perfect balance of sticky sweetness and savory depth. Often served with garlic fried rice (sinangag) and a fried egg — a combo known as tocilog — pork tocino is a dish that highlights the Filipino love for bold flavors and hearty, comforting meals.

Key Ingredients for Pork Tocino

  • Pork Shoulder or Belly – Thinly sliced for tenderness and flavor.
  • Brown Sugar – The main sweetener that gives tocino its caramelized edges.
  • Soy Sauce – Adds a savory, umami depth.
  • Garlic – Freshly minced for aroma and balance.
  • Salt – Essential for seasoning.
  • Pineapple Juice – Optional, but helps tenderize and adds a fruity tang.
  • Annatto Powder or Food Coloring – For that traditional reddish hue.

Step-by-Step Cooking Instructions

  1. Prepare the Pork
Slice pork shoulder or belly thinly (about ¼ inch thick). This ensures quick cooking and better flavor absorption.
  2. Make the Marinade
In a large bowl, combine brown sugar, soy sauce, minced garlic, salt, and pineapple juice. Stir until sugar dissolves. Add annatto or food coloring if desired.
  3. Marinate the Pork
Add the sliced pork and coat well with the marinade. Cover and refrigerate for at least 8 hours or overnight for best flavor.
  4. Cook the Tocino
Heat a pan over medium heat. Add marinated pork. Cover and let it cook until water evaporates. The pork will then fry in its own fat and caramelize.
  5. Serve
Once slightly crisp and sticky, serve hot with garlic fried rice (sinangag) and a fried egg to make the classic tocilog meal.
