Filipino Pork Tocino (Easy)

Ingredients

  • lbs pork shoulder

Marinade

  • cup brown sugar
  • 3 tbsp soy sauce
  • ½ cup pineapple juice
  • 2 cloves garlic
  • 2 tbsp vinegar
  • 1 tsp salt & pepper
  • 5 drop red food coloring
  • 1 chopped chili

Garlic rice

  • 1 tbsp garlic oil
  • 2 cups day old rice
  • 4 tbsp garlic chips

Garnish

  • egg
  • green onions

Instructions

  • Into a bowl, mix together all the marinade ingredients.
    ⅓ cup brown sugar, 3 tbsp soy sauce, ½ cup pineapple juice, 2 cloves garlic, 2 tbsp vinegar, 1 tsp salt & pepper, 5 drop red food coloring, 1 chopped chili
  • Slice your pork shoulder into thin pieces about ¼ inch thick.

  • Pour your marinade over your pork shoulder and let it marinate at least 30 minutes and up to overnight for best results.
  • Stir fry your rice with garlic oil and garlic chips to create garlic rice.
    1 tbsp garlic oil, 2 cups day old rice, 4 tbsp garlic chips
  • Into a high heat pan cook our pork shoulder. Continue stirring until the water has evaporated and the pork begins to caramelize.
  • Serve with rice, top with a fried egg and green onions.
