Fried Chicken and Bubble Waffles

This is a spin on the usual fried chicken and waffles recipes that you will see. Instead of a traditional waffle, I will be showing you how to make a Hong Kong style bubble waffle paired with a honey butter sauce that will take everything to the next level.

If you’re like me, then you grew up walking through Asian malls every weekend begging your parents for a bubble waffle. Fast forward a few years and everyone is raving about the idea of fried chicken and waffles. So I thought to myself, why not make a version of chicken and waffles using my personal favorite type of waffle.

Key steps for fried chicken and bubble waffles

Waffle maker: Unfortunately, in order to make these bubble waffles, you will have to purchase a waffle maker. Once you have done that, something very important that I learned is to oil both sides of the waffle maker. If you don’t, there will be a sticky mess to take care of which is very inconvenient.

Double fry: As you may have already heard, the key to extremely crispy fried chicken is to double fry. The objective of the first fry is to cook the chicken through. The second fry is the moment that the chicken becomes extra crispy.

Corn starch: I have always mixed cornstarch and flour as my seasoning flour. I find that only flour browns too quickly, however cornstarch doesn’t burn as fast and adds extra crunch.

Seasoning: Something I learned from frying a lot of chicken is to lightly season the chicken especially if you are covering with a sauce. This is especially true for salt because worst case scenario, you can add salt after the frying process.

Fried Chicken and Bubble Waffles

Ingredients
  

Bubble Waffle Batter

  • 1 cup flour
  • ½ cup sugar
  • tsp baking powder
  • 2 eggs
  • ¾ cup water
  • 1 tbsp oil
  • ½ tsp vanilla extract

Seasoning flour

  • 1 cup flour
  • ½ cup corn starch
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp paprika
  • ½ tbsp salt

Honey Butter Sauce

  • ¼ cup butter
  • ¼ cup honey
  • ½ tbsp sugar
  • ½ tbsp soy sauce

Buttermilk-Egg Mixture

  • 1 cup buttermilk
  • 1 egg
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp paprika
  • ½ tbsp salt

Instructions
 

Bubble Waffle

  • Mix flour, sugar, and baking powder in a bowl then whisk to combine first.
  • Add the remaining wet ingredients then combine until a smooth batter forms.
  • Preheat one side of your waffle maker over high heat to 400F. Make sure to oil both sides of the waffle maker.
  • Place ½ cup of waffle batter onto the preheated side of the waffle maker then cover with the other side and flip so that the preheated side is now facing up.
  • Keep over high heat for 3-4 minutes and the waffles should be golden brown and then allow to cool.

Honey Butter Sauce

  • Add all honey butter sauce ingredients in a small saucepan and allow to simmer for 5 minutes.

Fried Chicken

  • Combine ingredients for seasoning flour and buttermilk-egg mixture in separate bowls.
  • Season chicken with salt then first coat in seasoning flour.
  • Drop chicken into the buttermilk-egg mixture, then do a second coat in the seasoning flour, making sure to pack the flour in to all the small crevices.
  • Fry for 8-10 minutes at 300F first to cook through. Then second fry at 375F until golden and crispy.
  • Serve chicken on top of waffle and top with honey butter sauce.
