I love oysters in every form that they are made, but I must say that deep fried oysters with a Hoisin sauce is definitely up there on my list. There’s nothing better than biting in something crispy on the outside and soft and juicy on the inside.

Ingredients

Wet Batter:

  • ¾ cup flour
  • ¼ cup corn starch
  • 1 tbsp paprika
  • 2 tsp salt
  • 1 tbsp garlic powder
  • ½ tsp baking powder
  • 300 mL cold beer

Instructions

  • Rinse and pat dry your oysters ahead of time. (You just want them as dry as possible).
  • Preheat oil to 375°F.
  • Mix wet batter ingredients together (make sure to do this step after oil is preheated to keep the batter cold).
  • Coat oysters in corn starch then dip in wet batter and fry in oil until golden brown (about 2 minutes)
  • Let them cool on a plate and serve with hoisin sauce!

Notes

Tip: I like to keep one or two ice cubes in the batter to keep it consistently cold while I cook the oysters.
