These crispy shrimp balls use thinly sliced wonton wrappers as a light, crackly coating that fries up golden and irresistibly crunchy. The delicate wonton strips create layers of texture around the juicy, springy shrimp filling, giving each bite a perfect contrast between crisp exterior and tender center. It’s a fun, restaurant-style technique that elevates a simple shrimp ball into an addictive appetizer that disappears fast.

Key Ingredients for Crispy Shrimp Balls

  • Shrimp – Finely chopped or lightly processed shrimp creates a juicy, springy center with natural sweetness.
  • Thin Wonton Wrappers – Sliced into fine strips, they form a light, ultra-crispy coating that puffs and crackles when fried.
  • Corn Starch – Helps bind the shrimp mixture while keeping the texture light and bouncy.
  • Green Onions – Add freshness and a mild onion bite that balances the richness of frying.
  • Garlic – Provides savory depth and enhances the natural flavor of the shrimp.
  • White Pepper – Adds gentle heat and classic Chinese-style aroma.
  • Salt & Sesame Oil – Essential for seasoning and adding a subtle nutty finish.

Why We Use Sliced Wonton Wrappers

Sliced wonton wrappers create a lighter, crispier coating than traditional breading, giving the shrimp balls their signature crackly texture. The thin strips fry quickly and evenly, forming delicate layers that stay crunchy without feeling heavy or greasy. This technique also allows more surface area to crisp up, while still letting the shrimp filling remain juicy and tender inside—resulting in a perfectly balanced bite with maximum texture contrast.

Best Sauce for Crispy Shrimp Balls

A sweet and spicy dipping sauce is the perfect match for crispy shrimp balls, and Thai chili sauce shines here. Its balance of gentle heat, sweetness, and tangy acidity cuts through the fried exterior while complementing the natural sweetness of the shrimp. The glossy texture clings to the crisp wonton coating without softening it too quickly, making each dip bold, bright, and incredibly addictive.
