Ingredients 

Chicken Sausage

  • 900 g extra lean ground chicken
  • 1 tbsp thyme
  • 1 tbsp oregano
  • ½ tbsp ground sage
  • 1 tbsp fennel
  • 1 tbsp salt
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp black pepper
  • tbsp zero cal maple syrup

Eggs

  • 8 large eggs
  • 1 tbsp parsley
  • ½ tbsp salt
  • parmesan

Sauce

  • ½ cup greek yogurt
  • 2 tbsp light mayo
  • ¼ cup ketchup
  • ¼ cup mustard
  • 2 tbsp sriracha

Assembly

  • 8 english muffins
  • 8 slices low fat cheese

Instructions 

Chicken Sausage

  • Into a bowl mix together all your chicken sausage ingredients.
    900 g extra lean ground chicken, 1 tbsp thyme, 1 tbsp oregano, ½ tbsp ground sage, 1 tbsp fennel, 1 tbsp salt, 1 tbsp paprika, 1 tbsp garlic powder, 1 tbsp onion powder, ½ tbsp black pepper, 1½ tbsp zero cal maple syrup
  • Mix well and portion into 85g balls.
  • Smash them down into patties to cook on a medium-high heat pan for 3 minutes each side or until browned. Set aside.

Egg

  • Crack together 8 eggs and mix with parsley.
    8 large eggs, 1 tbsp parsley
  • Mix in salt and cheese.
    ½ tbsp salt, parmesan
  • Pour into a baking dish and bake at 350F for 15 minutes. Line with parchment paper to make sure it doesn't stick.
  • Remove from dish and portion into 8 equal parts.

Sauce

  • Mix together all sauce ingredients in a bowl.
    ½ cup greek yogurt, 2 tbsp light mayo, ¼ cup ketchup, ¼ cup mustard, 2 tbsp sriracha

Assembly

  • Start with your english muffins.
    8 english muffins
  • Add cheese, sausage, egg, and sauce.
    8 slices low fat cheese
  • Wrap in parchment paper and place in fridge/freezer.

Reheat instructions

  • If stored in fridge, microwave for 1.5 minutes on high.
  • If stored in freezer, make sure to defrost in fridge 8 hours before reheating.
