Shrimp toast is a very popular dish that my Mom used to eat as a kid growing up in Hong Kong. It is honestly very easy to make and you can even do it in the air fryer which makes it much healthier. The concept is a shrimp paste filling sandwiched in-between two slices of bread.
Air fried vs deep fried which is bettter?
The traditional way to make shrimp toast is by deep frying in oil which will give it a crispier, and lighter texture while keeping the filling moist. The air fryer/oven method is honestly just as good and if not better. I noticed that the toast is still very crispy, golden brown and much less oily. However, the filling is slightly more dry. Bread does soak up a lot of the oil so I would actually recommend the air fryer version. As you can see in the picture below, the left show the air fryer results and the right is the deep fried version. Not much of a difference if any.

How to cook them in the air fryer
The air fryer method is extremely simple and the cleanup is honestly much easier than deep frying. All I did after sandwiching the shrimp was spray both sides with oil. Then place it in your air fryer at 350F or oven at 400F for 10 minutes. Make sure to flip the toast half way through to ensure even browning.
What size shrimp for shrimp toast
Since we are going to be mincing the shrimp, I always recommend the cheapest/smallest size you can find. Of course larger shrimp will work as well but I would prefer saving them for a dish where you cook them whole.

Shrimp Toast
Ingredients
- 1 lbs shrimp
- 1 tsp salt
- ½ tsp white pepper
- 1 stalk green onion
- 2 cloves garlic
- 1 egg white
- ½ tsp sugar
- 1 tbsp cornstarch
- 6-8 slices bread
Dipping sauce
- ½ cup Japanese mayo
- 1 tbsp sriracha
Instructions
- Finely chop your shrimp until it is basically minced.1 lbs shrimp
- Season shrimp with salt, white pepper, green onion, grated garlic, egg white, sugar, and corn starch.1 tsp salt, ½ tsp white pepper, 1 stalk green onion, 2 cloves garlic, 1 egg white, ½ tsp sugar, 1 tbsp cornstarch
- Mix well and set shrimp filling aside.
- Remove crust from your bread.6-8 slices bread
- Add a large spoonful of the shrimp filling onto the bread and sandwich with the other slice.
- Deep fry at 350F until golden brown OR spray with oil and airfry at 350F or bake at 400F for 10 minutes, flipping halfway through.½ cup Japanese mayo, 1 tbsp sriracha
- Mix together dipping sauce ingredients and serve it with crispy shrimp toast.
