Mongolian Beef Bowls (meal prep)

Mongolian beef rice bowls are a sweet and savory meal prep favorite — ground beef coated in a rich soy-garlic sauce, served over fluffy rice for a quick, satisfying meal all week long.

Ingredients

  • 1.5 kg extra lean ground beef
  • 2 red chilies
  • 5 cloves minced garlic
  • 1 diced onion
  • ½ cup soy sauce
  • cup dark soy sauce
  • cup sugar or zero cal sweetener
  • 1 tbsp MSG
  • ¼ cup water
  • sesame seeds
  • green onion
  • 5 sliced bell peppers

Instructions

  • Into a hot pan begin to sear your ground beef. Break it apart and stir until it is fully cooked and beginning to caramelize.

  • Add in chopped chilies, garlic, and onions. Stir for 2 minutes.

  • Add soy sauce, dark soy sauce, sugar or zero cal sweetner, MSG, and water. Stir well until the sauce thickens and coats the beef.

  • Top with sesame seeds, green onions, and set aside.

  • Add bell peppers into the same pan and stir fry.

  • Serve it with rice and enjoy for the week.
