Salted Egg Yolk Chicken Wings
One of the best chicken wings flavors I have had yet.

Wings
- 1½ lbs chicken wings
- 1 tsp salt
- 1 tbsp garlic powder
- 1 tbsp onion powder
- ¼ cup corn starch
- 1 large egg
- 1 cup buttermilk
- 1 cup coarse sweet potato starch (add as needed)
Salted egg yolk crust
- 5 salted egg yolks
- 3 tbsp butter
- 4 cloves garlic (minced)
- 1 tsp salt
- 1 tsp sugar
Pat dry and season your chicken wings with salt, garlic powder and onion powder.
1½ lbs chicken wings, 1 tsp salt, 1 tbsp garlic powder, 1 tbsp onion powder
Mix together the buttermilk and egg for your wet batter.
1 large egg, 1 cup buttermilk
Drop chicken wings into corn starch, then into the wet batter, and coat well in coarse sweet potato starch.
¼ cup corn starch, 1 cup coarse sweet potato starch
Fry at 350F for 8 minutes until golden brown and crispy.
Salted egg yolk crust
Using a knife, smash your salted egg yolks and chop until a fine powder.

In a pan, heat up butter over medium heat and add garlic. stir 30 seconds.
3 tbsp butter, 4 cloves garlic
Add chopped salted egg yolks and stir until it begins to melt. If it doesnt melt after 2 minutes, add more oil.
Once the egg yolks begin to foam, add the crispy chicken wings.
Turn the heat up to high, add salt and pepper, and stir to combine for 30 seconds.
