Chop your garlic, ginger, green onions, mushrooms, and shallots in to a small fine dice.
Mix all ingredients in a large bowl with pork and let that marinate for at least 30 minutes and up to overnight. You can also cook some of your filling to taste it and adjust seasonings based on that.
Place 1-2 tbsp of the filling into your dumpling wrappers. If you are not familiar with the wrapping process, I would recommend starting with less filling and working your way up.
Wet the edges with water and make your first fold which is just folding the wrapper in half. Then you want to make 3 additional folds on each side making a total of 7 folds. A trick to make it easier is to push the filling down after you are done folding the first side to give yourself some more room. Experiment and keep going if you don’t get it perfectly, there’s plenty of dumplings to practice on lol.
Heat up a pan to medium heat with some oil and cook your dumplings until the bottom is crispy. (3-5 minutes)
Add ¼ cup of water and cover the pan with a lid to steam for 5-10 minutes, the dumpling wrappers should be soft and pork cooked through.
Combine sauce ingredients in a bowl and top with green onions!
