Into a bowl mix together hot water and dashi powder. Let it cool. This is your dashi stock.

Into a bowl mix together eggs, flour, salt, sugar, and the dashi stock you made in step 1.

Add chopped cabbage, green onions, as well as chopped octopus or any other diced protein you want.

Heat up a pan over medium heat and add 1 tbsp of oil.

Add the batter into a 12 inch pan and cook for 10-15 minutes until the bottom is crisp and golden brown.
Flip and continue cooking another 10 minutes until the other side is golden as well.
Top with okonomiyaki sauce, mayo, green onions, and bonito flakes.
