Dissolve gelatin powder in hot water. Mix with a whisk until no more clumps appear.
½ cup boiling water, 1 tbsp gelatin powder
Add sugar and mix to dissolve as well.

Add mango puree, coconut milk, lemon juice and mix until smooth and is one color.
1 cup mango puree, ¾ cup coconut milk, 1 tsp lemon juice
Add ¾ cup of mango chunk into the mixture then pour the mixture into two bowls.
1 cup mango chunks
Cover with plastic wrap and let it set in the fridge for at least 2 hours or until solid.
Top with remaining mango chunks and evaporated milk.
