Mango Pudding (Hong Kong Style)

This mango pudding is a take on the classic fish shaped mango pudding at dim sum.

Ingredients

  • ½ cup boiling water
  • 1 tbsp gelatin powder
  • 1 cup mango puree
  • ¾ cup coconut milk
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 cup mango chunks
  • 2 tbsp evaporated milk

Instructions

  • Dissolve gelatin powder in hot water. Mix with a whisk until no more clumps appear.

  • Add sugar and mix to dissolve as well.

  • Add mango puree, coconut milk, lemon juice and mix until smooth and is one color.
    1 cup mango puree, ¾ cup coconut milk, 1 tsp lemon juice
  • Add ¾ cup of mango chunk into the mixture then pour the mixture into two bowls.

  • Cover with plastic wrap and let it set in the fridge for at least 2 hours or until solid.
  • Top with remaining mango chunks and evaporated milk.
